My convoy stop tactic was to pick a part of the route where there is a bridge/traffic lights/bollards and use that to either stop them or take out the lead car. And if its a convoy where you can kill the target, just use the grenade launcher.
Hope there is some decent DLC at some point, as the ones I got with the Dedsec edition were fairly basic.
