We went on all the rides. Pirates, the Mansion (we went on three times because we all love it), Jungle Cruise, Big Thunder, Space Mountain...all of 'em. I got her the character pins, we had dinner with the Disney characters (a highlight for my niece). She even loved downtown Disney. Go fig...

Funny thing was, when I told my sister that I had blatantly ignored her wishes (my bro-in-law didn't care), she was fine with it. She was just happy that I was there with her.
